It’s the time of year when I start to crave soups, stews and casseroles like crazy. Their ability to warm the kitchen, fill the house with a delicious scent, and also fill my belly with some life-affirming substance is what makes these meals perfect for cool Fall days.
I recently went back to an old favourite of mine, the classic Lentil Stew. Now, this may not immediately sound appealing to all people, my husband included, but I have to say that it really does nail the classic Fall stew category well. The combination of the spicy lentils, thyme and sweet potatoes makes this a festive and hearty meal. And it’s inexpensive and quick to cook.
Lentils are not only delicious, but they are very nutritious. In fact, I recommend them as one of my Top 5 Pregnancy Superfoods for their incredible folic acid content. Just 1 cup of lentils provides nearly all of the minimum amount of folate you need to eat per day, 385mg. It is also rich in iron (7mg), protein (18mg), fiber (16mg!), and is a source of magnesium, phosphorus, potassium, sodium, zinc, copper and manganese. So, in my humble opinion, they are not only a pregnancy superfood, but an overall superfood for anyone looking for more bang for their nutritional buck.
