Happy New Year!
Have you resolved to eat healthier this new year? Recipes like this tasty quiche are a great way to get a high protein, veggie packed meal! Its almond based gluten free crust, combined with the eggs, give it a protein punch. And the rainbow of veggies will have your body humming with sweet sweet nutrition! Ok I may have gotten too excited there… But best of all you can eat this for breakfast, lunch or dinner, and it makes a nice frittata if you don’t want to fuss with making the crust.
The great thing about a quiche or fritatta is that you can really make it your own. As long as you keep the same basic volume of veggies to egg/milk mixture, you can play with which veggies and cheese you add. And if you have your own crust recipe you like, I strongly recommend you add some rosemary to the dough, it really kicks up the quiche to a whole new level.
